Lemon Chicken Bowtie Pasta

provided:
chicken
pasta
peas/carrots
garlic, Parmesan cheese, cream cheese, chicken broth

the recipe & instructions:
(I sent this recipe doubled)

1 tsp olive oil
2 cloves garlic, minced
6 ounces chicken
1/2 cup frozen peas
1/2 cup carrots, julienned
1 cup chicken broth
4 tbsp cream cheese
2 cups bowtie pasta (measured raw)
3 tbsp grated Parmesan cheese
1/2 tsp grated lemon rind
1/8 tsp salt & pepper

Cook pasta according to package directions.
Over medium heat, saute garlic. Add chicken and cook several minutes. Add carrots and peas and cook until chicken is no longer pink; remove from pan and keep warm. In the same pan add chicken broth, cream cheese and Parmesan cheese. Cook 3 minutes, stirring constantly until cheese melts. Add chicken mixture and cooked pasta and heat through. (Serves 4)

Chicken Calabaza

Directions:
Grill Chicken, then pour Zucchirii sauce on top.

Chicken seasoninq:
Garlic salt
Onion powder
Cumin
Pepper
Liquid smoke

Calabaza Sauce:
4 TBS butter
32 Zuechini slices (give or take)
6 TBS Corn
6 TBS Rotel
%tsb crushed red pepper
8 oz Velveeta cheese
12 oz chicken broth
Heat butter over med heat, saut6 zucchini, corn, and Rotel in butter with crushed red
pepper for approximately 2 min. Add cheese and chicken broth, let simmer stirring
regularly till cheese is melted or desired consistency. When done pour over chicken,
make sure zucchini is on top.

Swiss Cheese Chicken

provided:
chicken
swiss cheese
stuffing
cream of chicken soup
butter

the instructions:
Place chicken in baking dish. Cover chicken with swiss cheese. Mix soup with 1 can of water and chicken bouillon and pour over chicken. Cover entire dish with stuffing mix. Melt butter and drizzle over stuffing. Bake at 350 degrees uncovered for 50-55 minutes.

the recipe:
4-5 chicken boneless/skinless breasts
4-5 slices swiss cheese
1 can Cream of Chicken Soup
1 can water
1 t chicken bouillon
1 box stuffing mix
1/4-1/2 cup butter, melted

Arrange chicken in a shallow baking dish. Place 1 slice of cheese over each piece of chicken. Mix soup, water and bouillon and pour over chicken/cheese. Spread stuffing over entire pan and drizzle with butter. Bake uncovered at 350 degrees 50-55 minutes.

Creamy White Chicken Chili

Ingredients
1/2 medium onion (diced)
3 (14 ounce) cans great northern beans
3/4 teaspoon garlic (chopped)
1 teaspoon cumin
3/4 teaspoon oregano
1/4 teaspoon cayenne pepper (more or less depending on what you like)
salt and pepper
2 cups diced cooked chicken (Canned Chicken also works very well)
2 cups chicken broth
1 (4 ounce) can green chilies
12 ounces sour cream

Directions
1.Drain and Rinse Beans.
2.Mix all ingredients, except Sour Cream, in a large stew pot or a crock pot if you prefer.
3.Simmer for an hour, stirring occasionally.
4.Add sour cream just before serving!
5.Enjoy!

TUNA MELTS

Ingredients

• 6 (6-inch) pitas
• 2 (6 ounce) cans tuna, drained
• 2 tablespoons mayonnaise
• 2 tablespoons dill pickle relish
• 1/2 teaspoon dried dill
• 1/4 teaspoon salt
• 1 large tomato, sliced into thin wedges
• 6 Slices of Munster Cheese

Directions


1. Preheat the oven to 400 degrees F (200 degrees C). Place the whole pita breads in a single layer on a baking sheet. Bake for 5 minutes, or until lightly toasted.

2. In a medium bowl, mix together the tuna with the relish mixture. Spread an equal amount of the tuna mixture onto each of the pita breads. Arrange tomato wedges over the tuna, and place cheese slices over the top.

3. Bake for 5 minutes in the preheated oven, or until cheese has melted.

* I also provided a lime. Mike and I like to use the tuna plain and just add the juice of one lime with salt and pepper to taste. It's just as good with a few less calories.

Chicken Pot Pies

Recipe was posted before.. all you need to do is:
Line pie pan with one crust, fill with pie filling and top with other pie crust. Press edges together and bake at 425 for about 40 minutes. You may want to cover crust edges with foil about 30 mintues into baking time...to avoid overdone or dark crust.

Pork and Black Bean Sauce

Meat and Marinade

1/2 cup light soy sauce
4 tablespoons black bean sauce
1 1/2 lbs boneless pork loin, cut into 1 inch strips

Vegetables

1 yellow bell pepper, cut into strips
1 cup shredded sliced carrot
1 red onion, cut into strips
1 cup broccoli, broken into bite sized florets
1 garlic clove, minced

Directions

Add the pork strips and 1/2 of black bean sauce and marinate overnight in the refrigerator.

Strain the marinade from the pork and discard.

Spray wok with non-stick cooking spray and heat over high heat until hot.

Add in the peppers, onion, carrots, broccoli and garlic.

Stir fry for 3 to 4 minutes.

Remove veges from the wok.

Place pork and remaining marinade in the heated wok and stir fry until the pork is no longer pink (4-5 minutes).

Add veges back into the wok and stir fry for 2 minutes or until the sauce thickens.

Serve over steamed rice.

Ranch

Baked Potato Soup

provided:
Soup
Half & Half
Bread bowls
Garnish: cheese, sour cream, bacon

instructions:
Add half & half to soup and heat through.

Meat Loaf

1 Lb. Hamburger
1 egg
1 chopped onion (optional)
1/2 cup crushed soda crackers
1 can Tomato juice
Garlic salt to taste (I gave you 1 TBSP)

Mix all ingredients together. Before baking pour a little ketchup on top. Bake in a Loaf pan @ 350 for 1 hour or until done. Drain grease and serve.

Crock Pot Italian Chicken

provided:
chicken
Italian seasonings packet
butter
cream cheese
cream of mushroom soup
rice
chicken broth

the instructions:
Place chicken in crock pot (ok frozen) and sprinkle with Italian dressing packet and 4 T butter (cut in chunks). Cook on high 4 hours or a bit longer if chicken started frozen. Remove chicken from crock pot and add cream cheese and cream of mushroom soup and mix well. Return chicken to the crock pot and cook an additional 30-45 minutes.

the rice-
Bring chicken broth (plus water to make 2 cups) and 2 T butter to a boil. Add rice (1 cup) and bring back to a boil. After coming to a boil, turn heat to low and simmer until done. It will take a bit longer than white rice, so plan accordingly.

Paprika Chicken & Rice

provided:
chicken breasts
whipping cream
cream of mushroom soup
garlic salt
paprika
stuff for rice

the instructions:
Mix soup and cream. Season chicken with paprika and garlic salt. Place in baking dish and cover with cream/soup mixture. Bake covered at 350 degrees about 45 minutes then uncover for 15 or 20 minutes more.

For rice; bring 2 1/2 cups water to a boil. Add rice and other stuff (chicken bouillon, minced onion and butter) and bring back to a boil. Turn down heat and simmer until done.

GARLIC CHICKEN FARFALLE

16 oz. Farfalle pasta
1 c. heavy whipping cream
3-4 chicken breasts (boneless, skinless)
2 to 3 cloves garlic, crushed OR garlic salt (I do a spoonful of crushed garlic)
1 tsp. pepper*
1/2 c. butter
1 lb. bacon, crumpled**
1/2 c. shredded Parmesan cheese
1 (12 oz) Lawry’s mesquite marinade with lime juice

*Seems like a lot of pepper, but it has a wonderful flavor when everything mixes together. If you're apprehensive, do less pepper. You can always add more.

**We like to cook our bacon in the oven (400 degrees, convection). Way less messy. And it's crispy every time. Time varies, so you just have to watch it. I think it's usually around 30 minutes. Allow to cool and then crumple (I totally wear disposable gloves for this part - surprise, surprise).

[ directions ]

Crock pot chicken and bottle of marinade on low for 6 hours. Pull marinated chicken out of the juices, allow to cool a little bit, and shred (I pull it apart). Set this aside. About a half-hour before serving, boil the pasta. In a small saucepan, melt butter, add garlic, whipping cream, pepper, parmesan cheese, and crumpled bacon. Whisk together on low heat for 3-4 minutes. In a large bowl, pour over cooked, drained pasta, add chicken and stir through. Sprinkle a little bit more shredded parmesan cheese on top.

Chicken Broccoli Lasagna

Bake covered for 45 minutes at 350 degrees.

Burritos Bowls

1 pound hamburger
1 can chili beans
cheese
avocado
lettuce
tomato's
Rice (not minute rice)
Dori to Nacho Cheese chips

Cook Rice. Brown hamburger when done mix in chili beans, let simmer till beans are hot. Mix Guac. Then layer you favorite fixns in a bowl.

SWEDISH MEATBALLS

Provided:

Meatballs
Butter/Flour
Sour Cream
Broth Mixture
Noodles

Cook Meatballs on 350 for another 20 minutes or so.

Add butter/flour to skillet (while meatballs finish) and stir until butter is melted. Add broth mixture and cook, stirring until thickened and bubbly. Empty sour cream into a large bowl. Gradually add sauce, stirring constantly. Pour over meatballs.

BBQ Chicken Sandwiches

How to do it:
Place 3-4 chicken breast in crockpot
Add 1 bottle of your favorite bbq sauce..if you want you can sprinkle a little brown sugar too.
Cook on low for 6 hours or high for 4 hours.
When done, shred chicken with a fork.
Place meat on a bun and enjoy!

This is really good with corn on the cob and homemade mac and cheese!!

Adobo Peach BBQ Chicken (recipe from Picky Palate)

18 chicken tenders
1 1/4 Cups Peach preserves
¼ Cup adobo sauce (canned chipotle sauce), add more if you like it spicy hot!
½ Cup BBQ sauce
¾ teaspoon salt
2 cloves fresh garlic, minced

1. Place chicken tenders into a large zip lock bag. Pour in peach preserves, adobo sauce, BBQ sauce, salt and garlic. Marinate for at least 1 hour.

2. Preheat indoor grill pan or outdoor grill to medium high heat. Spray grill with cooking spray. Grill chicken for 3-4 minutes per side or until cooked through.

Beef/Chicken Stroganoff


provided:
meat (chicken or beef)
cream of celery, cream of mushroom soup, sour cream, mushrooms, onion soup mix
noodles

the instructions:
Spray crock pot with cooking spray. Mix everything except sour cream and mushrooms and put in crock pot. Cook on low 5-6 hours. When hot and bubbly add sour cream and mushrooms.

the recipe:

Beef Stroganoff
1 pkg stew meat (about a pound)
1 can cream of celery soup
1 can cream of mushroom soup
1/2 package onion soup mix
6 oz sliced mushrooms
8 oz sour cream

Mix all but sour cream and mushrooms and cook in a crock pot 5-6 hours on low. When hot and bubbly add sour cream and mushrooms. Serve over noodles.

Chicken Shishkabobs

grill chicken
brush veggies with reserve marinade and grill
cook rice

the recipes:
Marinade
3/4 cup oil
1/2 cup soy sauce
2 T vinegar
2 T honey
2 cloves of garlic
2-3 green onions cut up

Butter Rice
1 1/2 cups rice
2 t chicken bouillon
2 t chopped onion (dried)
1 T butter

Bring 2 1/2 cups of water to boil then add rice, onion, bouillon, and butter. Bring back to a boil and then simmer until done. (This is not minute rice.)

chicken eggroll burritos

Just fill eggroll wrappers with chicken mixture and bake.

Recipe:
Cooking spray
1 1/2 cups cooked chicken , chopped
1/2 cup sour cream
1/3 cup shredded Mexican cheese blend
1 (4-ounce) can diced green chiles
2 tablespoons chopped fresh cilantro leaves
1 teaspoon ground cumin


1 package egg roll wrappers
1 cup honey
3 tablespoons chopped pickled jalapenos
1 tablespoon cider vinegar
Directions
Preheat oven to 400 degrees F. Coat a large baking sheet with cooking spray.
In a large bowl, combine chicken, sour cream, cheese, green chiles, cilantro, and cumin. Mix well to combine.
Arrange egg roll wrappers on a flat surface. Place a small amount of filling in the lower third (towards 1 corner) of each wrapper. Fold over the bottom corner of the wrapper, tightly roll up 1 turn and then fold in the sides. Dip your finger in water and run it along the corner and edge. Tightly roll up the rest of the way, sealing the edges and seam shut. Place on prepared baking sheet and spray with cooking spray. Bake 10 to 12 minutes, until golden brown.

Chimichangas-can someone fix the formatting for me?

the instructions:

fill tortillas with a large spoonful of filling. Roll and secure with a toothpick. Deep fry until golden brown.


the recipe:

Chimichangas, from American Cannon
3 cups raw chicken, chopped


2 T butter

1 cup onion, finely chopped

1 cup celery, finely chopped

1 T flour

1/4 t garlic powder

1/4 t cumin

1 t seasoned salt

1 cup cooked potatoes, diced

1 can green chili salsa

1 cup chicken stock

8 medium flour tortillas



Saute chicken in butter 3-4 minutes. Add onion and celery and cook 3-4 minutes more. Stir in flour and mix well. Add seasonings, potatoes, salsa and chicken stock. Simmer until thick, about 5 minutes. Divide mixture and place on tortillas. Roll burrito style with no insides showing. Secure with a toothpick. Deep fry on both sides until golden brown. Garnish with lettuce, tomato, cheese, sour cream and avocado chunks.

BLACK BEAN PORK

Roll pork in flour or corn starch and fry in wok (or in a large skillet over HIGH heat) with 2 tablespoons of oil for about two minutes. Remove. Add 1 tablespoon of oil and vegetables. Stir-fry any vegetables that you like for about two minutes, again at very High heat. Add pork and mixture I provided with 2 tablespoons of water (more or less depending on consistency you like). Cook until everything is coated.

If you want to borrow our wok, just let me know. I think that it makes it much better. Actually, I have never tried it in a skillet, but I hear you just have to make it really hot.

Chicken Pot Pies

Chicken Pot Pies:
I sent the crusts and the filling separately so the crust won't get soggy.
Just place one crust in 9" pie pan and load in the filling.Place the second crust on top and seal edges. Cut small slits on top and bake at 425 for 30-40 minutes. During the last 10 minutes you may want to put foil on edges of crust to prevent burning.

Recipe:
1/3 cup butter
1/3 cup chopped onion
1/3 cup flour
1/2 teaspoon salt
1/4 teaspoon pepper
1 3/4 cup chicken stock
1/2 cup milk
21/2 cup shredded chicken (i used rotisserie)
2 cups frozen veggie mix

Melt butter in sauce pan, add onion and cook for 2 minutes. Add in f lour, it will be very thick. Slowly add in milk and chicken stock. Bring to bubbly boil. It will thicken this point. Add in veggies and chicken. Load mixture into pie crust and bake.

Green Chili Chicken Enchiladas

Stir Green Sauce, pour over enchiladas
sprinkle with cheese
Bake at 350 till cheese is melted

3-4 cooked Chicken breast- Shredded
12 corn tortillas
1 can Las Palmas green chili sauce
1 can cream of mushroom soup
1 can green chili's
Colby jack cheese (I don't have a measurement for this, so you can use a little or as much as you want)

Stir green chili and chicken together. Combine green sauce and cream of mushroom soup together. Heat tortillas in veg. oil- just enough to make them easy to roll. Pour a little of the green sauce in the bottom of a 9x13 pan(just enough so the tortillas wont stick) Take one tortilla put 1 1/2 Tbs. of chicken mix, sprinkle cheese, roll and place in pan; continue till pan is full. Pour remaining sauce over rolled enchiladas and sprinkle with cheese. Cook at 350 or until cheese is melted.

Pizza Roll

Pizza Dough is from the Breadsmith (will bring by tomorrow)
Ingredients -
1/2 lb. mozzarella
1/4 lb. diced cooked ham
1/2 lb. cooked sausage
1 lb.pepperoni sliced.
Oil mixture -1/4 c. olive oil 1/4 tsp. each oregano, basil, salt, pepper, garlic powder Mix all these together. Roll out to 10x12 rectangle, then spread oil mixture and meat and cheese mixture. roll like jelly roll, rise 30 min. cook 350 for 25-30 min.

Fresh Atlantic Salmon...mmmm!

Fish is ready to go on grill. I usually make a tin foil boat and then place fish inside. Drizzle with teryiaki sauce provided and cook until done..

It is topped with butter, garlic, honey and a little garlic salt!

Ranch Chicken Pizza

Ranch Chicken Pizza:
I found these wonderful crescent rolls that come in a sheet rather than the rolls that you have to try to seam together.. what a wonderful invention!
Anyways:::
Roll out dough, don't know if you will need both, but just in case, I sent two. Bake at 375 for about 9-10 minutes. take out and spread chicken, then cheese to top. Bake 7 more minutes until cheese is bubbly. Drizzle Wing sauce if you DARE!

Chicken is coated with Ranch, minced onion, garlic powder and pepper.
Enjoy!

Chicken Fettuccine Alfredo

provided:
Fettuccine noodles
Alfredo sauce
chicken to grill

the instructions:
Grill chicken, cook pasta and heat sauce.

the recipe:

Alfredo Sauce
2 cubes butter
2 (8 oz.) pkg. cream cheese
1 cup milk, cream or half & half (can use evaporated milk)
1 1/2 cups grated Parmesan cheese

Melt butter and cream cheese and whisk smooth, adding milk a bit at a time. Stir in Parmesan cheese and serve over your favorite pasta.

Honey Mustard Chicken

Hi Guys... sorry for the late delivery!
I have sent honey mustard chicken with egg noodles..
Pour Honey mustard sauce over chicken and bake at 350 for 30-40 minutes. You can serve over butter noodles of just eat those on the side.

Sauce:
1/3 cup honey
1/3 cup dijon mustard
4 tbls butter
melt and wisk together and pour over chicken

PORK CHOPS

Ready to go. Preheat oven then cook chops on 350 for up to an hour. If you cook them any higher they will be dry...like this heat! Ugh!

Dr Pepper Pork

Provided:
Pork Roast
Cheese
Lettuce
Tomato
Sour Cream
Tortilla
Ingredients for Cilantro Lime Rice

Cook 4-5 lb pork roast in a crock pot on low for 12 hours, pour water in (1/2 up side of meat)
Drain
Add:
1 TB cumin
1 c brown sugar
1 4oz can green chili
1 12oz bottle La Victoria taco sauce
40 oz Dr Pepper (not diet)
cook 4 more hours, shred meat and cook for 2 more hours.

Cilantro Lime Rice
Rice
Cilantro (about a handful, I use more because I LOVE cilantro)
1 Lime

Cook rice (Minute Rice) according to directions on box.
chop cilantro
Juice Lime
mix together before serving

Chicken Broccoli Lasagna

Lasagna

the instructions:

Bake covered at 350 degrees for 45 minutes to an hour (less if you set it out of the refrigerator for a bit beforehand.) Uncover last 15 minutes. Top with Parmesan cheese and serve.

Chicken Broccoli Lasagna

2 chicken breasts, cut in small pieces

1/2 onion, chopped

2 T butter

1 cup broccoli, chopped

1/2 cup water

1 egg

1 cup ricotta cheese

1 cup mozzarella cheese

8 lasagna noodles

Cook noodles as directed on package. Rinse well and lay out on piece of foil or wax paper on counter. Cook chicken and onion in butter until chicken is no longer pink, and onion is soft. Add 1/4 cup water and broccoli to pan. Cover and let broccoli steam. Mix cheeses and egg in separate bowl, and add chicken/broccoli mixture when broccoli is to your liking. Divide mixture between noodles, spread to cover each noodle. Roll noodles individually and place in baking dish that has been prepared with non-stick baking spray. Cover with favorite pasta sauce and cook covered for 45 minutes to an hour. Uncover last 15 minutes. Top with Parmesan cheese and serve.

Canola oil
Balsamic vinegar
splash of Red wine vinegar

Wisk together and pour on meat...

Honey Sesame Pork Tenderloin

1 lb pork tenderloin

Marinade:
1/2 c. soy sauce
2 cloves garlic, minced
1 tsp dry ginger
1 TBSP sesame oil

Glaze:
1/4 c. honey
2 TBSP brown sugar
4 TBSP sesame seeds

Put combined marinade ingredients in a large Ziplock bag; add pork. Marinate for 2 hours at room temperature or overnight in refrigerator. Remove from marinade. Pour honey and brown sugar on on a plate. Pour sesame seeds on a separate plate. Roll pork well in honey mixture, then roll in sesame seeds (or don't roll in sesame seeds). Bake in shallow pan at 375* for ~30 minutes (until temperature reaches 155-160*).

Honey Lime Chicken Enchiladas

Instructions:
Preheat oven to 350... pour cream sauce over enchiladas and sprinkle with cheese. bake for 10 minutes.. Hope you enjoy!
We missed our yummy dinners last week. Glad to be back...well, kind of..haha

Lasagna

1 lb Ground beef
1/2 lb Italian sausage
1 large onion(chopped)
2 cloves minced garlic
12 oz cottage cheese
12 oz ricotta cheese
2 eggs beaten
1/2 tsp Pepper
2 Tbsp. Parsley
1/2 c. grated Parmesan cheese
1 lb. mozzarella cheese, divided
1 pkg. Lasagna noodles
1 Jar Spaghetti sauce

1.Brown ground beef, sausage, onion ans garlic
2.Cook noodles (I use the no boil noodles)
3.Combine cottage and ricotta cheese, eggs, pepper, Parmesan cheese, and 1/2 of the mozzarella cheese
4.Put a a little sauce in the bottom of the pan, then layer noodles, meat, sauce cheese mixture:repeat. Sprinkle remainder of the mozzarella cheese on top.
5.Bake at 375 for 30 to 40 minutes.

Paprika Chicken & Butter Rice

Paprika Chicken

4-5 chicken breasts
1 pint whipping cream
2 cans cream of mushroom soup
paprika
garlic salt

Mix whipping cream and soup in a bowl. Sprinkle chicken with paprika and garlic salt. Cover chicken with whipping cream/soup mixture. Bake covered at 350 degrees for 45 minutes, then another 20 minutes uncovered.

Butter Rice

1 1/2 cups rice
2 1/2 cups water
1 heaping T chicken bouillon
1 heaping T minced onion
1 1/2 T butter

Prepare as you would regular rice. I always cook in my microwave rice cooker.

Spinach, Chicken & Pasta Salad

Spinach, Chicken & Pasta Salad

the instructions:
grill chicken and toss with salad goods

the recipe:
16 ounces bowtie pasta, cooked

Dressing:
1 cup vegetable oil
2/3 cup bottled Teriyaki sauce
2/3 cup white wine vinegar
6 T sugar
1/2 t salt
1/2 t pepper

15 ounces fresh spinach
6 ounces craisins
2-3 cans mandarin oranges, drained
1-2 cans water chestnuts, drained and chopped
1/2 cup parsley, chopped
1 bunch green onions, chopped
1/4 cup sesame seeds, toasted
6 ounces honey roasted peanuts
2 cups cooked chicken, cut into small pieces

Blend dressing ingredients in blender or food processor. Mix dressing and cooked pasta in medium bowl and marinate for 2 hours. Combine rest of salad ingredients in large salad bowl, add pasta and dressing and toss.

The Amazing Swedish Meatball

PROVIDED:

Meatballs and Sauce Ingredients
Noodles

INGREDIENTS:

1 pound ground beef
1/2 pound ground pork
1/2 cup chopped onion
3/4 cup bread crumbs
1 egg
1/2 cup milk
1 tablespoon dried parsley
1 tablespoon Worcestershire sauce
2 teaspoons salt
1 teaspoon pepper

1/4 cup vegetable oil
1/4 cup all-purpose flour
1 teaspoon paprika
1 tablespoon salt
1 teaspoon pepper
2 cups boiling water
3/4 cup sour cream

DIRECTIONS:

Preheat oven to 350.

In a saucepan, combine oil, flour, paprika, 1 tablespoon salt, and 1 teaspoon pepper. Cook over medium heat until sizzling. Stir in hot water and sour cream until smooth and heated through. (Plastic bag has everything but water, and sour cream. Sorry you have to use your own water, but sour cream is in separate container.)

Put meatballs in casserole dish and pour sauce over the top, and put in oven for 20 minutes, stirring occasionally.

Pour over egg noodles.

Garlic Chicken Farfalle

You can either cook ck in crock pot or grill the ck, my family loves it on the grill.

Chicken Flautas

the menu:
Chicken Flautas w/ garnish (sour cream, salsa, lettuce, cheese)

the instructions:
Brush tortillas with oil and warm in microwave, or spray with cooking spray or whatever you choose to prepare them. Fill with chicken mixture and secure with a toothpick. Fry in oil or bake in oven at 400 degrees until crispy.

the recipes:

Chicken Flautas
1/2 cup chopped onion
1 clove garlic, minced
1 tsp. cooking oil
2 cups cooked shredded chicken
1 cup black beans, rinsed and drained
1/2 cup salsa
2 T cilantro

Cook onion and garlic in oil until tender. Stir in chicken, black beans, salsa and cilantro. Fill tortillas and secure with a toothpick.

America's Spanish Rice
3 T oil
1 cup rice
1 large tomato
1 clove garlic
2 T onion, chopped
2 1/2 cups water
2 cubes chicken bouillon
1/2 t salt

Heat oil in skillet. Add rice to skillet and stir constantly until brown. In blender mix tomato, onion, garlic and 1/2 cup water. When rice is browned, add tomato mixture. Allow a bit of moisture to evaporate (3 minutes or so), then add remaining 2 cups of water, bouillon and salt. Bring to a boil and then turn down heat and simmer 45 minutes.

BBQ Chicken Sandwiches

BBQ chicken sandwiches:
chicken breasts
bbq sauce, brown sugar
buns

on the day you want to have this meal, just put chicken in crockpot and cover with entire bottle of bbq sauce and brown sugar. let cook on high for 3 hours or low for 5. when done, chicken should be tender enough to shred very easily with a knife and fork. serve on buns.
This meal is good with corn on the cob and mac and cheese!

Chicken Satay Stir-Fry

Ingredients:

4 cups water
2 cups jasmine rice, rinsed (someone will be getting regular rice, I ran out)
1 tsp butter
2 tablespoons canola or safflower oil
1 3/4 pound chicken breast cut into bite-size pieces
3 cloves garlic, crushed
1 medium yellow skinned onion, sliced
1 red bell pepper, seeded, quartered and sliced
1 cup shredded carrots
6 scallions (optional)
1 cup snow peas

***Satay Sauce***

4 tablespoons chunky peanut butter
3 tablespoons dark soy, Tamari
3 tablespoons honey
1 piece (1-inch size) ginger root, peeled and minced
1 clove garlic, crushed
1 teaspoon crushed red pepper flakes
1/2 orange, juiced

***Garnish***
1/4 cup chopped peanuts

Directions:

Heat water to boiling. Add rice, return to boil, stir. Cover pot and reduce heat to simmer. Cook rice until tender, 18 minutes. Fluff with fork.

For stir-fry, heat a large nonstick skillet over high heat. Add chicken and onion, stir-fry 3 minutes.

Add remaining veggies and stir-fry 5 minutes more. Heat sauce in a small pot over low heat, stirring the sauce until all ingredients are combined. Transfer stir-fry to a large platter and pour sauce evenly over the chicken and vegetables. Sprinkle the platter with chopped nuts. Serve jasmine rice in a separate dish.

Ravioli
Alfredo Sauce

I know this meal is simple but it is one of Tatum's favorites. Boil Ravioli according to direction. Cover in sauce or olive oil and garlic salt.

BUTTERMILK DRUMSTICKS

Ingredients:

chicken drumsticks
2 cups buttermilk
1/4 cup plus 2 tablespoons vegetable oil
2 cloves garlic, bruised and skins removed
1 tablespoon crushed peppercorns
1 tablespoon sea salt 1 teaspoon ground cumin
1 tablespoon maple syrup

Directions:

Place the chicken drumsticks in a large freezer bag, and add the buttermilk mixture and seasonings.

Leave the buttermilk marinated chicken in the fridge ideally overnight or out of the fridge for at least 30 minutes and up to 2 hours.

Preheat the oven to 425 degrees F. Take the chicken pieces out of the bag shaking off the excess marinade, and then arrange them in a roasting tin lined with foil.

Drizzle 1-2 tablespoons of oil, and then roast in the oven for about 30 minutes, or until brown, even scorched in parts, and juicily cooked through.

Taco Soup

1 lb hamburger
1 large onion, chopped
1 can hot chili
2 cans regular chili or kidney beans
1 can whole kernel corn
1 (15oz) can tomato sauce
1 (15oz) can diced tomatoes
1 pkg taco seasoning mix
1 pkg ranch dressing mix
1 1/2 cup water

Brown hamburger and onion. Add the rest of the ingredients and simmer for at least 15minutes. Tastes even better the next day.

Chicken Fettuccine Bake

the menu:
Chicken Fettuccine

the instructions:
Place chicken pieces in a 9x13 baking dish. Melt butter and drizzle over the chicken. Pour whipping cream over chicken. Cover entire dish with Parmesan cheese. Bake chicken as directed below and cook noodles.

boneless/skinless chicken breasts
flour to coat
minced onion/salt/pepper
1 cube butter
1 pint whipping cream
Parmesan cheese

Coat each piece of chicken in flour and place in 9x13 baking dish. Drizzle melted butter over the chicken (1 cube). Sprinkle with 1 Tablespoon dried minced onion and salt and pepper. Pour pint of unwhipped whipping cream over the top. Cover with Parmesan cheese (cover completely!). Bake uncovered for 15 minutes at 400 degrees then turn down to 325 degrees for about 20 to 25 minutes. Serve over fettuccine noodles or rice.

Sour Cream Chicken Enchiladas

Recipe:
2 cans cream of chicken soup
1 pint sour cream
1/2 block of cream cheese
2 small cans green chilies
meat from 1 rotisserie chicken
couple tablespoons of milk
2 cloves garlic minced

heat all ingredient in saucepan
spread a little in the bottom of 9x13 pan. layer flour tortillas and chicken mixture apprx. 3 times. top with cheese and bake for 30 minutes at 350.

This dish is good served with beans, chips and salsa...enjoy.

Grilled Chicken

Chicken
Pasta Salad

You just need to grill chicken, and maybe cook the potato's a little, or at least heat them up.

Marinade for chicken:
1 cup Italian dressing
1 cup 7-up
(or equal parts of each)

Okay~ so I really don't have a recipe for this salad so I will give you my "redneck" version of a recipe(which is what Mike calls it)
Pasta Salad
1 Package curly noodles
any veggies that you like (I usually use cucumber, carrots, red bell pepper, green onion, tomatoes, and broccoli)
String cheese (as much as you like-I use about 4or5)
Pepperoni(also as much as you like)
1 sm bottle of Italian Dressing

Cook noodles, cut up veggies, cheese,and pepperoni, pour in dressing, mix and serve.

Vodka Rigatoni

Vodka Rigatoni sauce
Rigatoni noodles
Green Salad w/ tomato and cucumber
Grapes
Bread
Parmesan Cheese for topping pasta or salad

Just heat sauce and noodles and serve.

Recipe for sauce:
3/4 lb. procuitto or black forest ham
3/4 of an onion
1 can tomato paste
1 bay leaf (which i forgot to take out,, watch out)
1/4 tspoon cayenne pepper, or more if you like
1/4 cup of vodka or chicken stock
2 pints or 1 quart of cream
1 large can whole peeled tomatoes, do not drain-smash with large spoon while cooking.
salt and pepper to taste

combine all ingredients in a large pot and bring to a boil. let simmer for 45 minutes. this will cover 2 lbs of pasta.

Watermelon and Strawberries

Pizza Dough is from the Breadsmith (time crunch)
Ingredients -
1/2 lb. mozzarella
1/4 lb. diced cooked ham
1/2 lb. cooked sausage1/
1 lb.pepperoni sliced.
Oil mixture -1/4 c. olive oil 1/4 tsp. each oregano, basil, salt, pepper, garlic powder Mix all these together. Roll out to 10x12 rectangle, then spread oil mixture and meat and cheese mixture. roll like jelly roll, rise 30 min. cook 350 for 25-30 min.

Fish is topped with honey ,garlic, garlic salt, dash of pepper and drizzled w/teriyaki sauce.
We grill ours on a boat made of tin foil for about 20 minutes. you can also bake if you like.
Chicken bakes at 450 for about 12-15 minutes.

Since Jaime made tasty rice and beans yesterday I decided not to duplicate again tonight (besides we have leftovers.) I marinated the chicken like I would for Fajitas but intended to use the chicken in a salad. I sent tortillas if some prefer to eat it that way.


the instructions:

Grill chicken. Slice and add to salad, or eat in tortilla.
Bake cookie dough as cookies (350 for 8-10 min.), or press in pie dish and bake to desired doneness. Top with a few scoops of ice cream and everybody grab a spoon. Yum.

Fajita marinade

2 T oil
2 T lemon juice
1 t garlic powder
1/8 t liquid smoke
1 t seasoned salt
1/2 t ground oregano
1/2 t pepper


Tomatillo Dressing (Costa Vida)

1 buttermilk ranch packet

1 c mayo
2 tomatillos, husk removed
1/2 bunch cilantro

Body Wash

Mexican Lasagna
Homemade Pinto Beans w/ Ham
Sticky Spanish Rice
Mike's Corn Salsa
Tortillas (Just a few in case one of the kids or adults don't like the Lasagna)
Chips
Sour Cream
Philosophy Carrot Cake

Ingredients:

1 cup fresh cilantro leaves
4 scallions, coarsely chopped
10 ounces fresh baby spinach
Coarse salt and ground pepper
Nonstick cooking spray
8 (6 inch) corn tortillas
1 (15.5 ounce) can pinto beans, drained and rinsed
1 cup prepared salsa (mild or medium)
8 ounces pepper Jack cheese, grated


Directions:

Preheat oven to 425 degrees F. In a food processor, combine cilantro, scallions, 1 teaspoon salt, and 1/4 teaspoon pepper with as much spinach as will fit; pulse, adding remaining spinach in batches, until coarsely chopped.

Coat an 8-inch square baking dish with cooking spray. Lay 4 tortillas in bottom of dish (they will overlap slightly). Layer with half of beans, salsa, spinach mixture, and cheese; repeat with remaining ingredients, ending with cheese and pressing in gently.

Cover dish with foil; place on a rimmed baking sheet. Bake until bubbling, 25 to 30 minutes; remove foil, and continue baking until golden, 15 to 20 minutes more. Cool 5 to 10 minutes before serving.

Carrot Cake Side Note:

I have been using the Philosophy Carrot Cake Body Soap and it smells so "real". I decided I needed to try the recipe on the bottle, surely it tastes as good as the soap smells. Well, I started feeling guilty after I started making it so I only made three loaves. You ladies will have to tell me how it tastes. I licked the batter of course, but that is not a real indication. :-)

All you need to do is heat 2-4 Tablespoons of olive oil in a large skillet, then heat chicken mixture, noodles, and basil. Salt and fresh cracked pepper to taste.

This is another picky palate recipe, so I will not be posting the recipe here. Also I hope no one minds that I didn't send bread, I actually forgot to get it while I was at the store. I don't know about you guys but we still have yummy bread left over from Tuesday and Wednesday.

Yummy Organic Strawberry Lemonade

Pour Honey mustard sauce over chicken and bake at 350 for 30-40 minutes. You can serve over butter noodles of just eat those on the side.

Sauce:
1/3 cup honey
1/3 cup dijon mustard
4 tbls butter
melt and wisk together and pour over chicken

Noodles just have some chicken bullion, garlic salt, olive oil and a little butter.

Babyback Ribs

One of our favorite places to get take out when we lived in Chicago was a little dive in Hyde Park called Ribs & Bibs. Every time we have ribs I think of it fondly. They serve their ribs on a slice or two of white bread--you know, the kind that sticks to the roof of your mouth when you take a bite. Denny reminded me of that last night and suggested I do the same today. Not such a good idea, so I'm passing on the bread, but enjoy the ribs.


the menu:

BBQ ribs
Baked potatos
Rolls
Corn
Watermelon
Fudgesicles


the instructions:

Slather ribs with barbeque sauce and grill on each side 5-10 minutes (just enough time to carmelize the sauce.)
Bake potatoes (I baked them with the ribs for the last hour, but they may need a little more oven time.)


the recipes:

BBQ Babyback Ribs

Turn ribs to the back side. With a butter knife gently remove membrane. It should pull off in one big piece. Rub both sides with your favorite rub. (I use McCormick's "Montreal Steak".) Double foil wrap each rack and place on a cookie sheet. Cook at 250 degrees for 4 hours. Take out and let cool about 10 minutes. Unwrap foil and slather with favorite barbeque sauce. Place on a low-medium heat grill for 5-10 minutes on each side.


Rolls (quick and easy)

2 1/2 cups flour
2 t salt
1/4 cup butter
1/2 cup sugar
2 T yeast

Mix together, then add:

2 c hot water
1 egg

Mix well, then add:

3/4 cup flour

Mix 2 minutes then add:

2 1/2 cups flour

Mix 10 minutes, then rest dough and allow to double. Divide dough into two and roll each half into a 12-15 inch circle. Cut each into 12-16 wedges (like a pizza) and roll into crescents. Place on greased baking sheet and brush with melted butter. Allow dough to double and then bake at 400 degrees 6-8 minutes.

Upside Down Pizza Casserole

UPSIDE DOWN PIZZA CASSEROLE
GARDEN SALAD/RANCH
GREEN BEANS
STRAWBERRY SHORTCAKE - We use half/half but some people use Cool Whip, so I will give you both. :-)

INGREDIENTS

1 pound lean ground beef
1 onion, chopped
1 teaspoon minced garlic
1 (16 ounce) jar spaghetti sauce
1 cup shredded mozzarella cheese, divided
1 cup grated Parmesan cheese, divided
1 (8 ounce) can refrigerated crescent rolls


DIRECTIONS

Preheat oven to 350 degrees F (175 degrees C).
Brown beef, onion and garlic in a large saucepan over medium high heat. Once browned, drain fat and stir in spaghetti sauce.
In a 9x13 inch baking dish, spread a layer of sauce. Top with 1/2 of the mozzarella and Parmesan cheeses, another layer of sauce and the rest of the cheese. Top with crescent rolls, pinching seams together.

You will just need to:

Bake in the preheated oven for 20 to 30 minutes, or until rolls are golden brown.

Tonight we will be having:
Sesame Chicken
Jasime Rice
Sweet snap peas
strawberries


Recipe:
4 chicken breast sliced
Sauce-
1/2 cup honey
1/2 cup soy sauce
1 cup water
2 tblsp corn starch
1 1/2 teaspoon ground ginger
sprinkle of red pepper flakes
toast sesame seeds

Wisk together ingredients. Heat til starting to bubble. Keep stirring...keep stirring.. Once sauce starts to thicken, remove from heat..

Sauce is made already so just sautee chicken in a little oil.. once done toss in the sauce.. should be ready to eat.Spinkle sesame seeds on top. BEWARE: sauce is very strong. a little goes a long way!

You can saute snap peas or steam..with a little garlic/butter.

Creamy Tomato Farfalle

1 lb Italian sausage, casings removed and crumbled
1/4 t crushed red pepper flakes
3 cloves garlic, minced
1/2 cup diced onion
28 oz diced tomatoes (canned or fresh), drained
1 1/2 cups heavy cream (or half/half)
1/2 t salt

1. Bring a large pot of salted water to boil. Cook pasta until al dente, refer to package for cooking ime. Drain and put aside.

2. Heat sausage and tomato mixtures in skillet together. Simmer until sauce thickens, about 15 minutes.

4. Fold pasta into sauce, heat through.

Steak and Potatoes

Tonights entree includes:
Tri tip steak
Redskin garlic mashed potatoes

Just grill steak to your liking, I like to grill the asparagus also...just a minute or two on each side. If not, just place on a cookies sheet at 400 for about 7-10 minutes.. yum!


Recipe for marinade on steak:
2tblspoon sugar
2tblspoon worshtechier sauce
4tblspoon soy sauce
4tblspoon redwine vinegar
little splash of cooking sherry
1 clove of garlic
grate a little onion in also

Potatoes:
Redskin potatoes
boil until tender
add a little milk, lots of garlic, butter and sour cream..
smash up as lumpy as you like them. I like them lumpy

Tortellini w/ Red Sauce

the instructions:

Grill chicken, slice and add to tortellini.
Cook tortellini according to directions on package.
Heat sauce.
Toss greens with dressing and top with croutons. This dressing is one of Denny's favorites. Usually when I make it it separates, this time it is quite thick--go figure. Your best bet is probably to mix with the lettuce rather than pour it on.

Zach's Caesar Dressing

6 T packed grated Parmesan Cheese
4 T mayo
4 t fresh lemon juice
1 t Dijon mustard
2 small cloves garlic
1/2 t Worcestershire sauce
1/2 cup extra virgin olive oil

Whisk all but oil together. Gradually whisk in olive oil. Good for 1 week.


Sugar Cookies

1 cup butter
2 cups sugar
2 t vanilla
3 eggs
Beat together
5 cups flour
4 T milk
Add milk as you add flour
1 t salt
1 t baking soda

Chill dough and roll thick.

Bake at 350 degrees 8-10 minutes

Frosting

3 T butter
8 oz cream cheese
3 T milk (at most 1/2 cup)
32 oz powdered sugar

Barbecued Meatballs

1 egg slightly beaten
1 can (5oz) evaporated milk
1 cup quick-cooking oats
1/2 cup finely chopped onion
1 tsp salt1 tsp chili powder
1/4 tsp garlic powder
1/4 tsp pepper
1 1/2 lb ground beef

sauce

1 cup ketchup
3/4 cup packed brown sugar
1/4 cup chopped onion
1/4 tsp garlic powder
1/2 tsp liquid smoke

In a bowl, combine the first 9 ingredients. Crumble beef over mixture and mix well. Shape into 1 inch balls; place in a greased 9x13 inch baking dish. Bake, uncovered, at 350 degrees for 18-20 minutes or until no longer pink. Meanwhile, combine the sauce ingredients in a saucepan. Bring to a boil. Reduce heat and simmer for 2 minutes, stirring frequently.

You need to:

Pour sauce over meatballs. Bake 10-12 minutes longer.

Cream Cheese Chicken

Cream Cheese Ck

Broccoli
Bread
Strawberry Delight

1 can Mushroom soup
2/3 c. chicken broth
1/2 stick of butter
1 8 oz cream cheese
1 pkg. Good Seasons "Zesty Italian" dressing
4 Large chicken breast
Angle Hair pasta

Pour soup, broth, butter and cream cheese in sauce pan and melt over med. heat constantly stirring so mixture doesn't burn. After melted, add pkg of Zesty Italian dressing and stir in. In the crock pot pour sauce over chicken, cook on low 8-10 hours. Serve over pasta.

Strawberry Delight (a.k.a. the best cake EVER!!!)

1 White cake mix
1 12 oz. Cool Whip
1 8 oz. cream cheese
1 large pkg. instant vanilla pudding
2 14 oz. container of Strawberry Glaze(in produce section)
2 pkg. Fresh or frozen Strawberries

1st Layer: Bake cake according to direction on box in 2 9x13 cake pan. COOL.

2nd Layer: Mix pudding according to direction on box. Add softened cream cheese and cool whip Spoon over cold cake and refrigerate a couple of hours.

3rd Layer: Mix Strawberries and glaze, then spoon over top.

Refrigerate and enjoy!!

Spinach Salad
Strawberries/almonds/poppy seed dressing (all for salad)
Green Beans

Bake Bbq mac at 350 for 25 minutes.. cheese should be bubbly.
Cook green beans as directed on ziploc steam bag.

Graham Cracker Pork Chops

Graham Cracker pork chops
Cheesy potatoes

the instructions:

Bake pork chops covered at 325 for 1 1/2 hours.
Bake potatoes at 350 for 45 minutes (I will probably bake the potatoes with the pork chops, low and slow.)


the recipes:

Pork Chops (from Denny's mom)

Dip chops in melted butter and then coat in graham cracker crumbs. I know, this one is really difficult.


Cheesy Potatoes

12 large potatoes, boiled and grated or 1 (24 oz) bag frozen country style hash browns, thawed
1 can cream of chicken soup
2 cups sour cream
1 cup grated Cheddar cheese
1/2 c butter, melted
1/3 cup onions, chopped
2 cups corn flakes
2 tablespoons butter, melted

Combine soup, sour cream, cheese, 1/2 c melted butter and onions. (I used onion powder because I do not like crunchy-or even slightly crunchy-onions in my soft potatoes, and I used 2 T of butter.) Gently blend in potatoes. Pour into 9x13 glass baking dish. Crush corn flakes and mix 2 tablespoons melted butter. Sprinkle on top. (Or omit the corn flake topping and just sprinkle with paprika--that is what I did.) Bake at 350 degrees for 40 to 45 minutes.

Trader Joes Chicken/Cheese Enchiladas (each pan is half and half)

Tomatoes/Sour Cream

I get the black bean sauce at Trader Joes that I use for the pork, and I needed some for our trip so while I was there I decided to try TJ's Enchilada Sauce. Tasted good to me so far. Let me know what you think. I hope it's not too spicy.

Enchiladas

ingredients:

Shredded Mexican Cheese
Yellow Corn Tortillas
Trader Joes Enchilada Sauce
Shredded Chicken (not canned)
Sour Cream
Oil

directions:

Remove the white meat off an entire Rotisserie chicken and shred. To the chicken add 8 oz. of sour cream and two cups of shredded Mexican cheese. Stir together and set aside.

Heat up one pan with oil, and another with enchilada sauce. Fry each tortilla for about 30 seconds, drain and transfer to enchilada sauce. Take tortilla out of sauce and fill with chicken mixture or just plain cheese, roll up and put in pan. Once pan is full cover with remaining sauce and top with cheese.

Preheat oven to 350 degrees. Bake enchiladas for 30 minutes or until cheese is melted.

These are just like Honolulu Burger, but with Chicken.;0) Just grill chicken and enjoy. Sorry about the store bought fries, but Hannah and Tatum really wanted curly fries.

Orange Jello Salad
1 (3 oz) pkg Orange Jello
1 (16 oz) carton Cottage Cheese
1 (8 oz) can pineapple (crushed, chunks, or tidbits)
2 (11 oz) cans Mandarin Oranges
1 (8 oz) carton Cool Whip
Mix jello with cottage cheese
Drain and add fruit (do not use the liquid from fruit)
Add cool whip
Mix well and refrigerate.

It's Wednesday! Let's eat...again!



Dinners this week have been great! Tonight we will be having Stuffed Shells.
Stuffed Shells
Salad w/ rasberry vinagrette
French bread
Apple cinnamon bread for dessert!


Recipe:
1 box jumbo shells
1/2 onion, diced
4 leaves of basil, chopped
8 ounces spinach leaves, chopped
3 cloves garlic, grated
large container of riccota cheese
mozzerella cheese
parmasean cheese
crushed tomatoes
jarred spaghetti sauce

Boil noodles about 15 minutes

sautee onion in olive oil about 4 minutes. grate in garlic. add chopped basil and spinach. cook about 3-4 minutes. put into bowl, add riccota cheese, hand full of mozz. cheese, 1/4 parmesean cheese. I usually pour about 1/4 cup of the crushed tomatoes in as well. mix well.

pour about 1 cup spaghetti sauce on bottom of casserole dish. fill shells with a spoon, lay seam side up. pour about another cup over shells and then top with mozzerella.
Bake for 30 minutes on 350.

Beef/Chicken Stroganoff

Beef or Chicken Stroganoff
Noodles

the instructions:

heat the noodles, steam the broccoli, & enjoy


the recipes:

Beef Stroganoff
2 lbs stew meat
2 cans cream of celery soup
2 cans cream of mushroom soup
1 pkg Lipton onion soup mix
8 oz sliced mushrooms
16 oz sour cream

Mix all but mushrooms and sour cream in crock pot. Cook on low 8 hours or high 4 hours. About an hourish before you eat, add the mushrooms and sour cream.


(FYI: I used 98% fat free soups and reduced fat sour cream.)

Tonight's meal includes:

Honey Sesame Pork Tenderloin (you can leave out the seeds if you want)
Mashed Potatoes
Cold Pea Salad (I had to try it, don't feel bad if you just toss it)
Corn on the Cob
Fruit Salad
Rolls
Mint Oreo Dessert

Honey Sesame Pork Tenderloin

1 lb pork tenderloin

Marinade:
1/2 c. soy sauce2 cloves garlic, minced
1 tsp dry ginger
1 TBSP sesame oil

Glaze:
1/4 c. honey
2 TBSP brown sugar
4 TBSP sesame seeds

Combine marinade ingredients in a large Ziplock bag; add pork. Marinate for 2 hours at room temperature or overnight in refrigerator. Remove from marinade. Mix honey and brown sugar together in a shallow plate. Pour sesame seeds on a separate plate. Roll pork well in honey mixture, then roll in sesame seeds (or don't roll in sesame seeds). Bake in shallow pan at 375* for ~30 minutes (until temperature reaches 155-160*)

Mashed potatoes just need to be heated. Use the microwave if you like.

Philly Cheese Steak Sandwiches

Steak/Ck (please let me know if you had enough meat, so I know for next time!!)
Bell peppers and onion
Cheese
Broccoli Salad
Chips
Cake

Heat oil in 2 pans, cook meat (season to taste with salt and pepper) in one pan and veggies in the other.

Option 1: Pre heat oven to 450. Butter/Mayo rolls, place meat, veggies and cheese on rolls then put in oven till cheese is melted.

Option2: I was told this is how you make an “authentic” Philly Cheese Steak. After you have cooked meat, put rolls flat side down in meat juice, let roll soak up juice, remove from pan then place all the fixings on top.


Broccoli Salad

2 cups red grapes
¼ cup sunflower seeds
½ cup raisins
4 cups broccoli heads, chopped
Optional 4 or 5strips bacon (fried and crumbled)

Dressing

½ cup sugar
1TBSP Vinegar
1 cup Mayonnaise
1 TBSP canned milk

Combine salad ingredients in a large bowl, mix dressing, pour over salad mix and serve.

Time to get your Mexian Fietsa on!

Mexican Chalupa
Fruit salad

This is my mother in laws yummy recipe. SHe makes if for parties or any occasion where you need to feed lots of people. It is so good and can be made with beef, pork or chicken.

3-4lb pork meat(pork shoulder)
1lg onion
3 cloves garlic
chicken stock
pinto beans
can of green chilies

I soaked beans overnight then put into crockpot. I also browned the pork for a couple minutes on each side before placing in pot. Sautee onion and garlic in butter and add to pot. Cook for good part of the day.. shred pork once beans are soft.
you may need to drain a little of the liquid out so it isn't too runny.

Shell:
take flour tortillas and push into deep fryer. Keep pushing in middle to make a bowl shape.. I recomend doing this outside!

All the work is done.. Just top your shell with chalupa, lett. tomato, avacado salsa, sour cream and fresh onion.. This is a one dish kind of meal!

I left the chicken to be cooked how you prefer. Grill or bake, then toss with all the goods....or eat them all separately like my little people do.


the recipes:

BBQ Chicken Chop Salad

2 boneless, skinless chicken breasts
1 cup barbeque sauce

Marinate chicken in sauce, then bake at 350 degrees for 30 minutes. Chop into pieces and refrigerate.

1/2 head iceberg, chopped (I used green leaf)
1/2 head Romaine lettuce, chopped
3 to 4 Roma tomatoes, chopped
1 jicama, peeled and diced
1/2 cup cilantro, chopped
1 (15oz) can black beans, rinsed and drained
1 cup frozen sweet corn, thawed
1/2 pound Montery Jack cheese, grated

Combine chicken in a large salad bowl with salad ingredients and toss. Serve with Ranch dressing, additional BBQ sauce and crispy corn chips.

It's Monday...Now Start Grillin'

Taco Soup was what I had put on the calendar, but it just didn't sound good to me. We eat ALOT of Mexican food at our house on the weekends. Steak was on sale at Albertson's, and yes I have been checking ads for the first time in my life, so I thought I'd share one of our favorite recipes for beef that even our boys eat.


ROSEMARY GARLIC BEEF
WILD RICE
JAMIE'S SPINACH SALAD (NOT ME)
ROLLS
CORN
BANANA CREAM PIT (VANILLA WAFER CRUST)

Rosemary Garlic Beef

Ingredients:

1/2 cup olive oil
1/4 cup red wine vinegar
2 rosemary branches leaves chopped
2 garlic cloves minced
1/2 teaspoon crushed red pepper flakes
1 1/2 teaspoons kosher salt
3 pounds sirloin in 1 1/2-inch cubes
1/2 teaspoon freshly ground black pepper

Directions:

Remove as much marinade as possible from the beef. Thread the beef on skewers. Sprinkle all sides with a teaspoon of salt and pepper. Grill over medium-high heat, turning every 1 1/2 minutes, until beef is deeply browned on the outside and still rare on the inside, 8-10 minutes (or to personal preference).

Jamie's Spinach Salad

Ingredients:

1 tablespoon butter
3/4 cup almonds, blanched and slivered
1 pound spinach, rinsed and torn into bite-size pieces
1 cup dried cranberries
2 tablespoons toasted sesame seeds
1 tablespoon poppy seeds
1/2 cup white sugar
2 teaspoons minced onion
1/4 teaspoon paprika
1/4 cup white wine vinegar
1/4 cup cider vinegar
1/2 cup vegetable oil

Directions:

Mix spinach, cranberries and almonds together. Toss with dressing.

Swedish Meatballs

Ingredients:

1 1/2 cups fresh bread crumbs
1 cup milk or half-and-half
1 1/2 pounds ground chuck or round (used turkey for Kim's)
1/2 lb. lean ground pork, or use all beef
2 eggs
1 med. onion, chopped fine
1/8 tsp. nutmeg
1/4 tsp. allspice
1 1/2 teaspoons salt
1/8 tsp. pepper
1/4 teaspoon salt
10 1/2 oz. can condensed beef broth
2 tablespoons flour
2 tablespoons melted butter
1/2 cup sour cream

Preparation:

Soak bread crumbs in milk for 5 minutes in a large mixing bowl. Add ground beef and pork, eggs, onion, 1 1/4 teaspoon salt, nutmeg, and allspice; mix well. Shape into 1 inch meatballs. Place meatballs on rack in broiler pan and bake for 15 minutes at 400°. Put browned meatballs in slow cooker. Add 1/2 can beef broth, pepper and remaining salt. Cover and cook on LOW for 5 to 6 hours. To thicken gravy, turn slow cooker to high. Combine butter and flour to make a smooth paste. Add paste and sour cream to remaining 1/2 can beef broth and pour over meatballs. Cook until thickened, about 45 minutes.

Absolute Best Ever Lasagna (actual recipe name)

Lasagna
Broccoli
Pineapple
Bread
Oreos


1 1/2 lbs. lean ground beef or turkey
1/2 lb. Italian sausage
24 oz. cottage cheese or ricotta (I use 12 of each)
2 eggs beaten
2 tsp. parsley
1/2 cup Parmesan cheese
1 lb mozzarella cheese, divided
Spaghetti sauce
Lasagna noodles (I used the no boil noodles this time, be sure to let me know which you liked better)

Brown ground beef/turkey and sausage. Mix together egg, cottage/ricotta cheese, and mozzarella and Parmesan cheese.

Put a thin layer of sauce in bottom of pan, then layer noodles cheese mixture, meat, and sauce. Repeat.

Cover with foil and bake at 375 for 50-60 min. Uncover and cook until cheese is melted (about 5 min). Let sit for 15 min then serve.

Today's dish is Honey Lime Chicken Enchiladas

Honey LIme Chicken Enchiladas
Beans
Chipotle Rice
Grapes
Chips/Salsa


Recipe for Enchiladas:
6 tbls of honey
5 tblsp Lime juice
2 tbls chili powder
1/2 teaspoon garlic powder
1 lb cooked chicken, shredded

8-10 small tortillas
1lb monterey jack cheese
16 ounces green enchilada sauce
1 cup heavy cream

Mix honey, lime chili powder and garlic together and toss chicken in. marinate overnight.
Pour 1/2 cup green sauce in 9x13 pan. Fill tortillas with chicken and cheese. save some of the cheese for top. Mix remaining enchilada sauce and cream and leftovermarinade. Pour on top of enchiladas and sprinkle w/ cheese. Bake at 350 for 30 minutes.


Ok... all the work is done..just pour sauce over enchiladas...(didn't want them to get soggy) and then bake at 350 for 30 minutes. Heat beans and rice and enjoy!

Lemon Chicken Bowtie Pasta

Lemon Chicken Bowtie Pasta
Pecan/Feta/Apple Salad
French Bread
Strawberries w/ brown sugar & sour cream
Ice Cream & Cookies


the instructions:

Pasta: mix pasta, sauce and chicken together and heat through
Strawberries: dip in sour cream and then roll in brown sugar, or just mix the sour cream and sugar together and get to the enjoying faster!


the recipes:

Lemon Chicken Bowtie Pasta
1 tsp olive oil
2 cloves garlic, minced
6 ounces chicken
1/2 cup frozen peas
1/2 cup carrots, julienned
1 cup chicken broth
4 tbsp cream cheese
2 cups bowtie pasta (measured raw)
3 tbsp grated Parmesan cheese
1/2 tsp grated lemon rind
1/8 tsp salt & pepper

Cook pasta according to package directions. Over medium heat, saute garlic. Add chicken and cook several minutes. Add carrots and peas and cook until chicken is no longer pink; remove from pan and keep warm. In the same pan add chicken broth, cream cheese and Parmesan cheese. Cook 3 minutes, stirring constantly until cheese melts. Add chicken mixture and cooked pasta and heat through. (Serves 4)


Salad
Favorite salad greens, green onion, feta cheese, granny smith apples, candied pecans and Marston's San Pasqual dressing--yum


Chocolate Chip Cookies
this is my standard chocolate chip recipe
1 cup butter
1 cup Crisco
2 cups brown sugar
1 cup sugar
Beat together
3 eggs
2 t baking soda
2 t salt
2 t vanilla
Mix
4 1/2 cups flour
Add chocolate chips and such to your fancy

Bake at 350 degrees for 8-10 minutes

Sides

This is something I really have a hard time with. Maybe everyone can give some favorites, kid friendly in their homes, recipes they like but don't like to make, or any ideas that would make this easier. In the end, if I am in a crunch, I just send what we eat in our home or whats on sale or in season. I'm open for suggestions, and I want everyone to be happy with their dinners so blog away.
