Pene With Fancy Chicken Sausage and Basil Ribbions

Pasta
Chicken mixture
Asparagus
Mixed Fruit

All you need to do is heat 2-4 Tablespoons of olive oil in a large skillet, then heat chicken mixture, noodles, and basil. Salt and fresh cracked pepper to taste.

This is another picky palate recipe, so I will not be posting the recipe here. Also I hope no one minds that I didn't send bread, I actually forgot to get it while I was at the store. I don't know about you guys but we still have yummy bread left over from Tuesday and Wednesday.

It's Wednesday again!

Hope everyone got my email about next months meals!

Tonight:
Honey Mustard Chicken
Butter noodles
Broccoli
Fruit salad
Rolls(not the good ole homemade ones like Thelissa's;()
Yummy Organic Strawberry Lemonade

Pour Honey mustard sauce over chicken and bake at 350 for 30-40 minutes. You can serve over butter noodles of just eat those on the side.

Sauce:
1/3 cup honey
1/3 cup dijon mustard
4 tbls butter
melt and wisk together and pour over chicken

Noodles just have some chicken bullion, garlic salt, olive oil and a little butter.

Babyback Ribs

Ribs & Bibs

One of our favorite places to get take out when we lived in Chicago was a little dive in Hyde Park called Ribs & Bibs. Every time we have ribs I think of it fondly. They serve their ribs on a slice or two of white bread--you know, the kind that sticks to the roof of your mouth when you take a bite. Denny reminded me of that last night and suggested I do the same today. Not such a good idea, so I'm passing on the bread, but enjoy the ribs.


the menu:

BBQ ribs
Baked potatos
Rolls
Corn
Watermelon
Fudgesicles


the instructions:

Slather ribs with barbeque sauce and grill on each side 5-10 minutes (just enough time to carmelize the sauce.)
Bake potatoes (I baked them with the ribs for the last hour, but they may need a little more oven time.)


the recipes:

BBQ Babyback Ribs

Turn ribs to the back side. With a butter knife gently remove membrane. It should pull off in one big piece. Rub both sides with your favorite rub. (I use McCormick's "Montreal Steak".) Double foil wrap each rack and place on a cookie sheet. Cook at 250 degrees for 4 hours. Take out and let cool about 10 minutes. Unwrap foil and slather with favorite barbeque sauce. Place on a low-medium heat grill for 5-10 minutes on each side.


Rolls (quick and easy)

2 1/2 cups flour
2 t salt
1/4 cup butter
1/2 cup sugar
2 T yeast

Mix together, then add:

2 c hot water
1 egg

Mix well, then add:

3/4 cup flour

Mix 2 minutes then add:

2 1/2 cups flour

Mix 10 minutes, then rest dough and allow to double. Divide dough into two and roll each half into a 12-15 inch circle. Cut each into 12-16 wedges (like a pizza) and roll into crescents. Place on greased baking sheet and brush with melted butter. Allow dough to double and then bake at 400 degrees 6-8 minutes.

Upside Down Pizza Casserole

UPSIDE DOWN PIZZA CASSEROLE
GARDEN SALAD/RANCH
GREEN BEANS
STRAWBERRY SHORTCAKE - We use half/half but some people use Cool Whip, so I will give you both. :-)

INGREDIENTS

1 pound lean ground beef
1 onion, chopped
1 teaspoon minced garlic
1 (16 ounce) jar spaghetti sauce
1 cup shredded mozzarella cheese, divided
1 cup grated Parmesan cheese, divided
1 (8 ounce) can refrigerated crescent rolls


DIRECTIONS

Preheat oven to 350 degrees F (175 degrees C).
Brown beef, onion and garlic in a large saucepan over medium high heat. Once browned, drain fat and stir in spaghetti sauce.
In a 9x13 inch baking dish, spread a layer of sauce. Top with 1/2 of the mozzarella and Parmesan cheeses, another layer of sauce and the rest of the cheese. Top with crescent rolls, pinching seams together.

You will just need to:

Bake in the preheated oven for 20 to 30 minutes, or until rolls are golden brown.

Sesame Chicken mmmmm....

Tonight we will be having:
Sesame Chicken
Jasime Rice
Sweet snap peas
strawberries


Recipe:
4 chicken breast sliced
Sauce-
1/2 cup honey
1/2 cup soy sauce
1 cup water
2 tblsp corn starch
1 1/2 teaspoon ground ginger
sprinkle of red pepper flakes
toast sesame seeds

Wisk together ingredients. Heat til starting to bubble. Keep stirring...keep stirring.. Once sauce starts to thicken, remove from heat..

Sauce is made already so just sautee chicken in a little oil.. once done toss in the sauce.. should be ready to eat.Spinkle sesame seeds on top. BEWARE: sauce is very strong. a little goes a long way!

You can saute snap peas or steam..with a little garlic/butter.

Monday Night

Creamy Tomato Farfalle
Spinach Salad w/sweet Poppy Seed Dressing
Broccoli
Chocolate Dessert Bread

Creamy Tomato Farfalle

1 lb Italian sausage, casings removed and crumbled
1/4 t crushed red pepper flakes
3 cloves garlic, minced
1/2 cup diced onion
28 oz diced tomatoes (canned or fresh), drained
1 1/2 cups heavy cream (or half/half)
1/2 t salt

1. Bring a large pot of salted water to boil. Cook pasta until al dente, refer to package for cooking ime. Drain and put aside.

2. Heat sausage and tomato mixtures in skillet together. Simmer until sauce thickens, about 15 minutes.

4. Fold pasta into sauce, heat through.

Steak and Potatoes

Greetings fellow chefs...

Tonights entree includes:
Tri tip steak
Redskin garlic mashed potatoes
asparagus
rolls
ice cream

Just grill steak to your liking, I like to grill the asparagus also...just a minute or two on each side. If not, just place on a cookies sheet at 400 for about 7-10 minutes.. yum!


Recipe for marinade on steak:
2tblspoon sugar
2tblspoon worshtechier sauce
4tblspoon soy sauce
4tblspoon redwine vinegar
little splash of cooking sherry
1 clove of garlic
grate a little onion in also

Potatoes:
Redskin potatoes
boil until tender
add a little milk, lots of garlic, butter and sour cream..
smash up as lumpy as you like them. I like them lumpy

Tortellini w/ Red Sauce

the menu:

Grilled chicken
Cheese Tortellini w/ red sauce
French Baguette
Caesar Salad
Sugar Cookies

the instructions:

Grill chicken, slice and add to tortellini.
Cook tortellini according to directions on package.
Heat sauce.
Toss greens with dressing and top with croutons. This dressing is one of Denny's favorites. Usually when I make it it separates, this time it is quite thick--go figure. Your best bet is probably to mix with the lettuce rather than pour it on.


the recipes:

Zach's Caesar Dressing

6 T packed grated Parmesan Cheese
4 T mayo
4 t fresh lemon juice
1 t Dijon mustard
2 small cloves garlic
1/2 t Worcestershire sauce
1/2 cup extra virgin olive oil

Whisk all but oil together. Gradually whisk in olive oil. Good for 1 week.


Sugar Cookies

1 cup butter
2 cups sugar
2 t vanilla
3 eggs
Beat together
5 cups flour
4 T milk
Add milk as you add flour
1 t salt
1 t baking soda

Chill dough and roll thick.

Bake at 350 degrees 8-10 minutes

Frosting

3 T butter
8 oz cream cheese
3 T milk (at most 1/2 cup)
32 oz powdered sugar

Barbecued Meatballs

1 egg slightly beaten
1 can (5oz) evaporated milk
1 cup quick-cooking oats
1/2 cup finely chopped onion
1 tsp salt1 tsp chili powder
1/4 tsp garlic powder
1/4 tsp pepper
1 1/2 lb ground beef

sauce

1 cup ketchup
3/4 cup packed brown sugar
1/4 cup chopped onion
1/4 tsp garlic powder
1/2 tsp liquid smoke

In a bowl, combine the first 9 ingredients. Crumble beef over mixture and mix well. Shape into 1 inch balls; place in a greased 9x13 inch baking dish. Bake, uncovered, at 350 degrees for 18-20 minutes or until no longer pink. Meanwhile, combine the sauce ingredients in a saucepan. Bring to a boil. Reduce heat and simmer for 2 minutes, stirring frequently.

You need to:

Pour sauce over meatballs. Bake 10-12 minutes longer.

Cream Cheese Chicken

Cream Cheese Ck
Pasta
Broccoli
Bread
Strawberry Delight

1 can Mushroom soup
2/3 c. chicken broth
1/2 stick of butter
1 8 oz cream cheese
1 pkg. Good Seasons "Zesty Italian" dressing
4 Large chicken breast
Angle Hair pasta

Pour soup, broth, butter and cream cheese in sauce pan and melt over med. heat constantly stirring so mixture doesn't burn. After melted, add pkg of Zesty Italian dressing and stir in. In the crock pot pour sauce over chicken, cook on low 8-10 hours. Serve over pasta.

Strawberry Delight (a.k.a. the best cake EVER!!!)

1 White cake mix
1 12 oz. Cool Whip
1 8 oz. cream cheese
1 large pkg. instant vanilla pudding
2 14 oz. container of Strawberry Glaze(in produce section)
2 pkg. Fresh or frozen Strawberries

1st Layer: Bake cake according to direction on box in 2 9x13 cake pan. COOL.

2nd Layer: Mix pudding according to direction on box. Add softened cream cheese and cool whip Spoon over cold cake and refrigerate a couple of hours.

3rd Layer: Mix Strawberries and glaze, then spoon over top.

Refrigerate and enjoy!!

Strawberries/almonds/poppy seed dressing (all for salad)
Green Beans

Bake Bbq mac at 350 for 25 minutes.. cheese should be bubbly.
Cook green beans as directed on ziploc steam bag.

Graham Cracker Pork Chops

the menu:

Graham Cracker pork chops
Cheesy potatoes
Rolls
Asparagus
Grapes/Strawberries


the instructions:

Bake pork chops covered at 325 for 1 1/2 hours.
Bake potatoes at 350 for 45 minutes (I will probably bake the potatoes with the pork chops, low and slow.)


the recipes:

Pork Chops (from Denny's mom)

Dip chops in melted butter and then coat in graham cracker crumbs. I know, this one is really difficult.


Cheesy Potatoes

12 large potatoes, boiled and grated or 1 (24 oz) bag frozen country style hash browns, thawed
1 can cream of chicken soup
2 cups sour cream
1 cup grated Cheddar cheese
1/2 c butter, melted
1/3 cup onions, chopped
2 cups corn flakes
2 tablespoons butter, melted

Combine soup, sour cream, cheese, 1/2 c melted butter and onions. (I used onion powder because I do not like crunchy-or even slightly crunchy-onions in my soft potatoes, and I used 2 T of butter.) Gently blend in potatoes. Pour into 9x13 glass baking dish. Crush corn flakes and mix 2 tablespoons melted butter. Sprinkle on top. (Or omit the corn flake topping and just sprinkle with paprika--that is what I did.) Bake at 350 degrees for 40 to 45 minutes.

Trader Joes Chicken/Cheese Enchiladas (each pan is half and half)
Spanish Rice
Beans
Pineapple
Tomatoes/Sour Cream

I get the black bean sauce at Trader Joes that I use for the pork, and I needed some for our trip so while I was there I decided to try TJ's Enchilada Sauce. Tasted good to me so far. Let me know what you think. I hope it's not too spicy.

Enchiladas

ingredients:

Shredded Mexican Cheese
Yellow Corn Tortillas
Trader Joes Enchilada Sauce
Shredded Chicken (not canned)
Sour Cream
Oil

directions:

Remove the white meat off an entire Rotisserie chicken and shred. To the chicken add 8 oz. of sour cream and two cups of shredded Mexican cheese. Stir together and set aside.

Heat up one pan with oil, and another with enchilada sauce. Fry each tortilla for about 30 seconds, drain and transfer to enchilada sauce. Take tortilla out of sauce and fill with chicken mixture or just plain cheese, roll up and put in pan. Once pan is full cover with remaining sauce and top with cheese.

Preheat oven to 350 degrees. Bake enchiladas for 30 minutes or until cheese is melted.

Jamaican Jerk'd Chicken Burgers

Jamaican Chicken
Buns
Pineapple
Tomatoes
Lettuce
Cheese(pepper jack/adults and moz./kiddos)
Mandarin Jello Salad
Curly fries

These are just like Honolulu Burger, but with Chicken.;0) Just grill chicken and enjoy. Sorry about the store bought fries, but Hannah and Tatum really wanted curly fries.

Orange Jello Salad
1 (3 oz) pkg Orange Jello
1 (16 oz) carton Cottage Cheese
1 (8 oz) can pineapple (crushed, chunks, or tidbits)
2 (11 oz) cans Mandarin Oranges
1 (8 oz) carton Cool Whip
Mix jello with cottage cheese
Drain and add fruit (do not use the liquid from fruit)
Add cool whip
Mix well and refrigerate.

It's Wednesday! Let's eat...again!



Dinners this week have been great! Tonight we will be having Stuffed Shells.
Stuffed Shells
Salad w/ rasberry vinagrette
French bread
Apple cinnamon bread for dessert!


Recipe:
1 box jumbo shells
1/2 onion, diced
4 leaves of basil, chopped
8 ounces spinach leaves, chopped
3 cloves garlic, grated
large container of riccota cheese
mozzerella cheese
parmasean cheese
crushed tomatoes
jarred spaghetti sauce

Boil noodles about 15 minutes

sautee onion in olive oil about 4 minutes. grate in garlic. add chopped basil and spinach. cook about 3-4 minutes. put into bowl, add riccota cheese, hand full of mozz. cheese, 1/4 parmesean cheese. I usually pour about 1/4 cup of the crushed tomatoes in as well. mix well.

pour about 1 cup spaghetti sauce on bottom of casserole dish. fill shells with a spoon, lay seam side up. pour about another cup over shells and then top with mozzerella.
Bake for 30 minutes on 350.
