Beef/Chicken Stroganoff

Tuesday again...


the menu:

Beef or Chicken Stroganoff
Noodles
Broccoli
Carrots/Ranch
Strawberries & Blueberries
Ice Cream cones


the instructions:

heat the noodles, steam the broccoli, & enjoy


the recipes:

Beef Stroganoff
2 lbs stew meat
2 cans cream of celery soup
2 cans cream of mushroom soup
1 pkg Lipton onion soup mix
8 oz sliced mushrooms
16 oz sour cream

Mix all but mushrooms and sour cream in crock pot. Cook on low 8 hours or high 4 hours. About an hourish before you eat, add the mushrooms and sour cream.


(FYI: I used 98% fat free soups and reduced fat sour cream.)

Tonight's meal includes:

Honey Sesame Pork Tenderloin (you can leave out the seeds if you want)
Mashed Potatoes
Cold Pea Salad (I had to try it, don't feel bad if you just toss it)
Corn on the Cob
Fruit Salad
Rolls
Mint Oreo Dessert

Honey Sesame Pork Tenderloin

1 lb pork tenderloin

Marinade:
1/2 c. soy sauce2 cloves garlic, minced
1 tsp dry ginger
1 TBSP sesame oil

Glaze:
1/4 c. honey
2 TBSP brown sugar
4 TBSP sesame seeds

Combine marinade ingredients in a large Ziplock bag; add pork. Marinate for 2 hours at room temperature or overnight in refrigerator. Remove from marinade. Mix honey and brown sugar together in a shallow plate. Pour sesame seeds on a separate plate. Roll pork well in honey mixture, then roll in sesame seeds (or don't roll in sesame seeds). Bake in shallow pan at 375* for ~30 minutes (until temperature reaches 155-160*)

Mashed potatoes just need to be heated. Use the microwave if you like.

Philly Cheese Steak Sandwiches

Steak/Ck (please let me know if you had enough meat, so I know for next time!!)
Bell peppers and onion
Cheese
Broccoli Salad
Chips
Cake

Heat oil in 2 pans, cook meat (season to taste with salt and pepper) in one pan and veggies in the other.

Option 1: Pre heat oven to 450. Butter/Mayo rolls, place meat, veggies and cheese on rolls then put in oven till cheese is melted.

Option2: I was told this is how you make an “authentic” Philly Cheese Steak. After you have cooked meat, put rolls flat side down in meat juice, let roll soak up juice, remove from pan then place all the fixings on top.


Broccoli Salad

2 cups red grapes
¼ cup sunflower seeds
½ cup raisins
4 cups broccoli heads, chopped
Optional 4 or 5strips bacon (fried and crumbled)

Dressing

½ cup sugar
1TBSP Vinegar
1 cup Mayonnaise
1 TBSP canned milk

Combine salad ingredients in a large bowl, mix dressing, pour over salad mix and serve.

Time to get your Mexian Fietsa on!

Mexican Chalupa
Fruit salad

This is my mother in laws yummy recipe. SHe makes if for parties or any occasion where you need to feed lots of people. It is so good and can be made with beef, pork or chicken.

3-4lb pork meat(pork shoulder)
1lg onion
3 cloves garlic
chicken stock
pinto beans
can of green chilies

I soaked beans overnight then put into crockpot. I also browned the pork for a couple minutes on each side before placing in pot. Sautee onion and garlic in butter and add to pot. Cook for good part of the day.. shred pork once beans are soft.
you may need to drain a little of the liquid out so it isn't too runny.

Shell:
take flour tortillas and push into deep fryer. Keep pushing in middle to make a bowl shape.. I recomend doing this outside!

All the work is done.. Just top your shell with chalupa, lett. tomato, avacado salsa, sour cream and fresh onion.. This is a one dish kind of meal!

the instructions:

I left the chicken to be cooked how you prefer. Grill or bake, then toss with all the goods....or eat them all separately like my little people do.


the recipes:

BBQ Chicken Chop Salad

2 boneless, skinless chicken breasts
1 cup barbeque sauce

Marinate chicken in sauce, then bake at 350 degrees for 30 minutes. Chop into pieces and refrigerate.

1/2 head iceberg, chopped (I used green leaf)
1/2 head Romaine lettuce, chopped
3 to 4 Roma tomatoes, chopped
1 jicama, peeled and diced
1/2 cup cilantro, chopped
1 (15oz) can black beans, rinsed and drained
1 cup frozen sweet corn, thawed
1/2 pound Montery Jack cheese, grated

Combine chicken in a large salad bowl with salad ingredients and toss. Serve with Ranch dressing, additional BBQ sauce and crispy corn chips.

It's Monday...Now Start Grillin'

Taco Soup was what I had put on the calendar, but it just didn't sound good to me. We eat ALOT of Mexican food at our house on the weekends. Steak was on sale at Albertson's, and yes I have been checking ads for the first time in my life, so I thought I'd share one of our favorite recipes for beef that even our boys eat.


ROSEMARY GARLIC BEEF
WILD RICE
JAMIE'S SPINACH SALAD (NOT ME)
ROLLS
CORN
BANANA CREAM PIT (VANILLA WAFER CRUST)

Rosemary Garlic Beef

Ingredients:

1/2 cup olive oil
1/4 cup red wine vinegar
2 rosemary branches leaves chopped
2 garlic cloves minced
1/2 teaspoon crushed red pepper flakes
1 1/2 teaspoons kosher salt
3 pounds sirloin in 1 1/2-inch cubes
1/2 teaspoon freshly ground black pepper

Directions:

Remove as much marinade as possible from the beef. Thread the beef on skewers. Sprinkle all sides with a teaspoon of salt and pepper. Grill over medium-high heat, turning every 1 1/2 minutes, until beef is deeply browned on the outside and still rare on the inside, 8-10 minutes (or to personal preference).

Jamie's Spinach Salad

Ingredients:

1 tablespoon butter
3/4 cup almonds, blanched and slivered
1 pound spinach, rinsed and torn into bite-size pieces
1 cup dried cranberries
2 tablespoons toasted sesame seeds
1 tablespoon poppy seeds
1/2 cup white sugar
2 teaspoons minced onion
1/4 teaspoon paprika
1/4 cup white wine vinegar
1/4 cup cider vinegar
1/2 cup vegetable oil

Directions:

Mix spinach, cranberries and almonds together. Toss with dressing.

Swedish Meatballs

Ingredients:

1 1/2 cups fresh bread crumbs
1 cup milk or half-and-half
1 1/2 pounds ground chuck or round (used turkey for Kim's)
1/2 lb. lean ground pork, or use all beef
2 eggs
1 med. onion, chopped fine
1/8 tsp. nutmeg
1/4 tsp. allspice
1 1/2 teaspoons salt
1/8 tsp. pepper
1/4 teaspoon salt
10 1/2 oz. can condensed beef broth
2 tablespoons flour
2 tablespoons melted butter
1/2 cup sour cream

Preparation:

Soak bread crumbs in milk for 5 minutes in a large mixing bowl. Add ground beef and pork, eggs, onion, 1 1/4 teaspoon salt, nutmeg, and allspice; mix well. Shape into 1 inch meatballs. Place meatballs on rack in broiler pan and bake for 15 minutes at 400°. Put browned meatballs in slow cooker. Add 1/2 can beef broth, pepper and remaining salt. Cover and cook on LOW for 5 to 6 hours. To thicken gravy, turn slow cooker to high. Combine butter and flour to make a smooth paste. Add paste and sour cream to remaining 1/2 can beef broth and pour over meatballs. Cook until thickened, about 45 minutes.

Absolute Best Ever Lasagna (actual recipe name)

Lasagna
Broccoli
Pineapple
Bread
Oreos


1 1/2 lbs. lean ground beef or turkey
1/2 lb. Italian sausage
24 oz. cottage cheese or ricotta (I use 12 of each)
2 eggs beaten
2 tsp. parsley
1/2 cup Parmesan cheese
1 lb mozzarella cheese, divided
Spaghetti sauce
Lasagna noodles (I used the no boil noodles this time, be sure to let me know which you liked better)

Brown ground beef/turkey and sausage. Mix together egg, cottage/ricotta cheese, and mozzarella and Parmesan cheese.

Put a thin layer of sauce in bottom of pan, then layer noodles cheese mixture, meat, and sauce. Repeat.

Cover with foil and bake at 375 for 50-60 min. Uncover and cook until cheese is melted (about 5 min). Let sit for 15 min then serve.

Happy Wednesday!

Today's dish is Honey Lime Chicken Enchiladas

Honey LIme Chicken Enchiladas
Beans
Chipotle Rice
Grapes
Chips/Salsa


Recipe for Enchiladas:
6 tbls of honey
5 tblsp Lime juice
2 tbls chili powder
1/2 teaspoon garlic powder
1 lb cooked chicken, shredded

8-10 small tortillas
1lb monterey jack cheese
16 ounces green enchilada sauce
1 cup heavy cream

Mix honey, lime chili powder and garlic together and toss chicken in. marinate overnight.
Pour 1/2 cup green sauce in 9x13 pan. Fill tortillas with chicken and cheese. save some of the cheese for top. Mix remaining enchilada sauce and cream and leftovermarinade. Pour on top of enchiladas and sprinkle w/ cheese. Bake at 350 for 30 minutes.


Ok... all the work is done..just pour sauce over enchiladas...(didn't want them to get soggy) and then bake at 350 for 30 minutes. Heat beans and rice and enjoy!

Lemon Chicken Bowtie Pasta

Lemon Chicken Bowtie Pasta
Pecan/Feta/Apple Salad
French Bread
Strawberries w/ brown sugar & sour cream
Ice Cream & Cookies


the instructions:

Pasta: mix pasta, sauce and chicken together and heat through
Strawberries: dip in sour cream and then roll in brown sugar, or just mix the sour cream and sugar together and get to the enjoying faster!


the recipes:

Lemon Chicken Bowtie Pasta
1 tsp olive oil
2 cloves garlic, minced
6 ounces chicken
1/2 cup frozen peas
1/2 cup carrots, julienned
1 cup chicken broth
4 tbsp cream cheese
2 cups bowtie pasta (measured raw)
3 tbsp grated Parmesan cheese
1/2 tsp grated lemon rind
1/8 tsp salt & pepper

Cook pasta according to package directions. Over medium heat, saute garlic. Add chicken and cook several minutes. Add carrots and peas and cook until chicken is no longer pink; remove from pan and keep warm. In the same pan add chicken broth, cream cheese and Parmesan cheese. Cook 3 minutes, stirring constantly until cheese melts. Add chicken mixture and cooked pasta and heat through. (Serves 4)


Salad
Favorite salad greens, green onion, feta cheese, granny smith apples, candied pecans and Marston's San Pasqual dressing--yum


Chocolate Chip Cookies
this is my standard chocolate chip recipe
1 cup butter
1 cup Crisco
2 cups brown sugar
1 cup sugar
Beat together
3 eggs
2 t baking soda
2 t salt
2 t vanilla
Mix
4 1/2 cups flour
Add chocolate chips and such to your fancy

Bake at 350 degrees for 8-10 minutes

Sides

This is something I really have a hard time with. Maybe everyone can give some favorites, kid friendly in their homes, recipes they like but don't like to make, or any ideas that would make this easier. In the end, if I am in a crunch, I just send what we eat in our home or whats on sale or in season. I'm open for suggestions, and I want everyone to be happy with their dinners so blog away.
